Located in Attin, our orchard is the beating heart of our project. Managed in permaculture and according to the principles of organic farming, it hosts a great diversity of fruit trees: apple, pear, nashi, and plum trees.
We also grow small fruits for our macerations. This is where we draw the essence of our fruity creations, following the rhythm of the seasons.
For our beers, we have chosen to work with ancient varieties. We exclusively use the organic wheat "Feeling", a variety from the 1950s, grown by Benoît at the Ferme de la Douce Folie.
This choice guarantees rustic flavors and supports the cereal biodiversity of our region.
For our malts, we have chose to work with a collective that collects barley from farmers of the North. This guarantee us to brew with organic barley year-round.
Our hops are 100% organic. They mostly come from Riquier, at the Ferme de la Clairvoie in Méteren, passionately grown in the North.
For our wild beers, we let our hops age for 2 to 3 years. This process reduces bitterness while preserving their preservative properties — allowing the wild fermentation to fully express itself.
